Description
Category: light intensity oil, balanced in the perception of both bitter and spicy; characterized by soft but persistent notes of grass and fresh vegetables.
Aroma: the bouquet starts with light and enveloping sensations of fresh grass: parsley, chive, celery and courgette are predominant, together with a note of green apple.
Flavor: in the mouth flavor is fresh, with typical notes of grass and fresh vegetables such as chive; then we find soft but persistent sensation of wild asparagus. Not aggressive in the perception of bitter nor spicy, it flows away with a simple note of white pepper.
Food pairing: recommended for raw fish and raw meat, sweet and savory pies and mature cheese; wonderful for finishing complex, spicy dishes where the richness of the flavors is enhanced.
